Panna Cotta with Oat Crumble and Caramelized Peaches

This is an adapted recipe which I stumbled upon in a local food blog. The first thing that drew my attention was the designer look of the dessert more than the recipe. It looked classy but complex. As I got down to the recipe, I was pleasantly surprised. It was not difficult after all. The name as you can imagine is Italian and translates as “cooked cream”, although one does not have to do much cooking. The whole preparation takes about thirty minutes but it’s the freezing or resting time that takes longer. If you plan to put it in the refrigerator overnight, ensure that the glasses are cling-wrapped appropriately so as to retain the moisture else they just might taste a little rubbery. While I prefer to use the Peach, you can experiment with other seasonal fruits as well. To make this more child friendly you can replace the roasted oat crumble layer with a layer that goes well with kids, like crushed Oreo. After having this dessert, my son very appropriately complimented with “It is rare to have a dessert which looks great and tastes even better.” In other words a “Model” dessert. Ingredients For Panna Cotta :

  • 1 cup full cream milk
  • 1 cup fresh heavy cream (Amul fresh will do)
  • 1/3 cup sugar
  • 2 tsp gelatine powder
  • 1 Tsp Vanilla extract

Ingredients For Oat Crumbs:

  • 4 Tbsp rolled Oats
  • 2 Tbsp whole wheat flour
  • 2 Tbsp butter
  • 1Tbsp honey
  • 1 Tbsp brown sugar
  • 2 Tbsp roasted crushed almonds
  • 1 pinch of Cinnamon powder

Ingredients For Caramelised Peaches:

  • 2 Peaches ( or any other seasonal fruits of your choice), cut into thin slices
  • 1 Tbsp butter
  • 1 Tbsp brown sugar
  • 1/2 Tbsp of honey
  • ½ Tbsp water

Instructions

Instruction for making the Panna Cotta :

  1. In a pan heat together the heavy cream, full cream milk and the sugar. Stir continuously. The cream, milk and sugar mix should get only slightly warm and no more. Warm enough for the sugar to dissolve. The mix should neither be heated on high flame nor be boiled.
  2. Switch off the flame. Add the vanilla extract, stir and keep aside.
  3. In a separate small bowl, add the gelatin to the cold water, mix and allow it to stand for 5 – 7 mins until it blooms completely. Always bloom the gelatin in cold water first, before adding to warm liquids.
  4. Add the bloomed gelatin to the Panna Cotta mixture. Stir continuously until the gelatin completely dissolves and the mixture attains a smooth, silky texture. You may pass this Panna Cotta mixture through a sieve as well.
  5. Divide this mixture into small glasses or bowls . Fill them till half their capacity. Now by using small trays or even muffin trays , arrange to set the small glasses in a tilted way. You can set the Panna Cotta in the glasses without the tilt as well. Now chill in the refrigerator for at least 4 hours.

Instruction for making the Oats Crumb :

  1. Mix together the oats, whole wheat flour, almonds and cinnamon powder. Pour in the melted butter along with the honey. Mix well to ensure the oat mix is thoroughly coated.
  2. Spread the mix in a baking tray and bake for 20 – 25 minutes in an oven set to 375 ° F/ 175 °C. Roast till golden brown.
  3. Allow it to cool completely as it will then become more crunchier. Once the Panna Cotta mix solidifies in the refrigerator, take portions of the oats mix and layer it along with the Panna Cotta.

Instruction for making the Caramelized Peaches :

  1. There are two ways you can caramelise the peaches, that is, in a pan over the burner or in an oven.
  2. Slice the peaches and arrange them in a baking tray.
  3. Next add the butter, pour the water, drizzle the honey and sprinkle the brown sugar.
  4. Mix and bake the peaches in the oven preheated to 200 °C for 15 – 20 mins or until they are well caramelized.
  5. Arrange 2 or 3 slices of caramelized peaches on top of the Panna Cotta and Oats crumb mix.
  6. Ready to be served.

Notes

While I prefer to use the Peach, you can experiment with any other seasonal fruits as well. To make this more child friendly you can replace the roasted oat crumble layer with a layer that goes well with kids, like crushed Oreo. If you are planning to freeze the Panna Cotta overnight instead of 4 or 5 hours, I recommend the glasses to be carefully sealed with a cling film so that it doesn’t loose its moisture. Else it might harden and become a bit rubbery.
