Watermelon Salad with Feta and Basil

Watermelon is my favourite fruit. As a family, we used to have a lot of watermelon particularly for breakfast. It’s much later that I chanced upon this interesting combination. I tried it with my family, and it was an instant hit. So, if you are looking for something refreshing, light and popular with the entire family, this is a good choice. Particularly good for mothers to give the kids in summer when the temperatures are soaring. It serves as a healthy, cool, refreshment. Watermelon is available throughout the year and this salad can be had anytime of the day. The composition is simple and doesn’t need a lot of time or effort to put together. Make the salad fresh when you are ready to eat it, otherwise the crunchiness of the watermelon is lost. So go ahead and food around with the Watermelon and feta cheese salad.

Ingredients

  • 2 cups Watermelon, deseeded and cubed
  • 1/3 cup Feta Cheese, cubed
  • A small bunch of fresh sweet Basil
  • 1 Tbsp extra virgin Olive Oil
  • 2 Tbsp Lime Juice
  • 1 Tbsp honey
  • 1 Tbsp extra virgin Olive Oil
  • Pinch of Salt
  • Dash of freshly grinded black Pepper

Instructions

  1. In a small bowl whisk together the Olive oil, Lime juice, Honey, Salt and Pepper. I often add a little Mustard Sauce to personalise it to my taste. Though it’s very much optional.
  2. Combine the cubed watermelon, feta cheese along with the fresh basil in a large salad bowl. Sprinkle the salad with the prepared dressing. Toss gently and serve immediately.
  3. Can be served as a mid-day munchy or as an appetizer before a meals or along with meals serving grilled chicken or sandwiches.

Notes

Be sure to serve it as soon as it’s made as it doesn’t stay very well for long and also the watermelon doesn’t retain its crunchiness. I mostly add 1 heaped Tsp of Mustard Sauce to the dressing. Having a Bengali taste bud, tried using even Kasundi Mustard Sauce as a variation. Tastes simply wonderful!
