Mango Mousse Cake

This a very good option for all mango lovers during the mango season. A tried and tested recipe enjoyed by all my friends and family, you can’t go wrong with the Mango Mousse Cake. This is a popular choice for young and old. Needless to say, the mango needs to be ripe, sweet and tasty. Taste the mango before making the puree. You may opt for a canned version of the Puree but I would highly recommend making the Puree fresh at home. It makes a difference to the ultimate taste. Presentation is important so be sure to add toppings of your choice or add it to the layers. This dessert needs to be served chilled and it is refreshing end to the meal on a warm summer afternoon or evening. So tango with Mango and happy fooding around!

Ingredients

  • 1 cup diced mango
  • 1/3 cup sugar
  • 1/4 cup condensed milk
  • 1 cup whipping Cream
  • 2 Tsp gelatin
  • 34 Tbsp warm water.


Instructions

  1. In a blender blend the diced mango and the sugar to make a smooth puree. Keep aside.
  2. Pour the whipping cream into a large bowl and whip till it stands in soft peaks.
  3. Add the gelatin to the warm water. Stir together till the gelatin dissolves completely. Allow to stand for 5 minutes. Then microwave for 30 seconds. Allow it to cool completely.
  4. Next add the mango puree and the gelatin to the whipped cream. Fold in the puree along with the condensed milk and gelatin. Mix thoroughly.
  5. In a springform cake mould pour the mousse mix and allow to refrigerate for at least 4 hours or more.
  6. Once set remove the springform cake and decorate with some more diced mangoes if you like. Serve chilled.

Notes

If you do not possess a springform cake mould, you may use a cake ring instead. Wrap a butter paper in the inner side and continue. Also to make it taste a bit different, if you want you can throw in some diced mangoes in between the whipped cream cum mango puree layer before refrigerating it for the first 4 hours and more. In case you plan to refrigerate overnight, it might be a good idea to keep it well covered, else the cream might dry out.
