Kolkata Jhal Muri

The Jhal Muri is a popular street food from the Eastern part of the country. It was a much sought after tasty snack when we were growing up in Kolkata. So much so that we all had our favourite jhal muri vendors near our school and home. While the origins of this snack can be traced to Bengal, the jhal muri is immensely popular in Orissa, Bihar and Bangladesh. At first glance this snack looks similar to the bhelpuri chaat. There are however several differences. While the bhelpuri uses tamarind and green chutneys, the jhal muri puri gets it’s unique taste from the mustard oil which is an essential ingredient. The Masala mix in jhal muri comprises essentially of red chili powder, roasted cumin powder and red chili and black salt. It’s a good idea to add some chana chur (hot grams) to add flavour but other options such as namkeen mixtures also do the trick. Optional ingredients such as sprouted channa and chick peas can also be added. A topping of Sev is a good idea. Actually, the jhal muri is quite versatile and while there is an original recipe, please feel free to experiment. The word ‘jhal’ in Bengali means hot and spicy. So, adding red chili powder and cut green chilies is a must. The mustard oil adds to the spicy mouthfeel. Sometimes, I use the oil from hot chili pickles as well. Finally, don’t forget to squeeze some lemon juice into the mixture. Another suggestion is to use the Kasundi (Bengali mustard sauce) which is a good substitute for the lemon. Ingredients

• 3 cups Muri or Murmure (Puffed Rice)
• 1/3^rd cup Onion, finely chopped
• 3 heaped Tbsp boiled, peeled Potatoes, diced small
• 1 ½ Tsp Green Chillies, finely chopped
• 2 Tbsp Tomato, diced small
• 3 Tbsp Cucumber, diced small
• 4 Tbsp Sev Mix
• 2 Tbsp fresh Coriander, finely chopped
• 1 Tsp roasted Cumin powder
• 1 Tsp Chaat Masala
• ½ Tsp Black Salt
• ½ Tsp Red Chilli Powder
• 2 – 2 ½ Tbsp Mustard Oil
• 1 Tbsp Lemon Juice (or 1 Tbsp Amchur powder )
• Salt according to taste

Instructions

1. Add all the above ingredients one by one in a large mixing bowl.
2. Toss together and mix well thoroughly.
3. Serve immediately
