The Mango Mastani is quite a popular summer drink. It is a kind of desi milkshake. Originally from Pune, it is now available in many parts of India. This is a tasty, hydrating beverage refreshment for the summer months. I wanted to use the same concept but experiment with a different fruit. Hence the choice of the Muskmelon. This is also called the “Honeydew Melon” and is the ultimate summer fruit with high water content packed with minerals and vitamins. It is not very sweet and has a neutral taste profile making it amenable for fusion with ice-cream and condensed milk. I have added Sago Pearls to the drink to give it a rich texture and mouthfeel and as an energy booster during summer months. It’s also quite healthy and easy to digest. This drink is easy to make and can be done in a jiffy. Think of it like a milkshake which can be easily blended together. This drink has appeal across age groups, so be sure to make ample quantities of it. A unique way to serve the drink is to pour into the musk melon shell. It looks amazing on the table. So, chill out with the Muskmelon Mastani. I am sure you will keep coming back for more.

Ingredients
- 1/ 4 cup Sabudana ( Sago Pearls)
- 5 cups of fresh, ripe Muskmelon or Kharbuja (Honeydew), scooped out and diced into cubes
- 1/3 – 1/2 cup Condensed Milk (adjust the sweetness according to taste)
- 2 cups Vanilla Ice Cream
- A handful of Ice Cubes
- A few drops of Vanilla Extract (optional)
- Toasted Pistachio, Almonds or any other nuts of your choice (optional)
Instructions
- 1. Soak the Sabudana for about 2 hrs in water. Drain the water and then boil them till they are translucent.
- Boil them on high flame for a few minutes. When they are done they will be fluffy and cooked.
- Take them off the heat, strain them and allow them to cool down. The Sago Pearls should be quite sticky by now.
- In the meantime, transfer the diced Muskmelon cubes to a blender jar. Add the condensed milk and blend it to a pulp.
- Next, add 2 cups of Vanilla Ice cream, a handful of ice cubes to the blender. Blend it all together till smooth and frothy.
- To assemble take your glass or jar and scoop in 2 tbsp each of the prepared Sago. Add 1- 2 tbsp each of finely chopped Muskmelon. You may add nuts of your choice here, if you are using any.
- Pour the blended mix to fill half of the glass or jar. Stir to separate out the sticky Sabudana, then go on to pour the remaining mixture and fill up the glass or jar.
- Serve chilled.
