My son never liked Spinach and I guess that’s normal for most kids. However he loves waffles. So now you get the drift as to where the idea of a spinach waffle came from. Sometimes challenges trigger innovation and this is one such example. This is an original recipe. The waffle itself is not made of eggs or milk. I have used things which are available in any Indian kitchen i.e. whole wheat flour, flattened rice, grounded cumin, yoghurt, green chillies and other desi ingredients. I must confess that I was quite nervous initially because it was too much of an experiment but to my pleasant surprise the end product beat my own expectations. This a versatile meal and can be served for Breakfast or Brunch. It’s quite wholesome and healthy without compromising on the taste. To spice things up you can team the Savoury Spinach Waffle with Salsa, pickles or chutneys of your choice. Here is a tip. If you are in a hurry in the morning you can prepare the spinach puree the previous evening.

The Desi Waffle
Ingredients
- 1 cup blanched Spinach
- 3 Tbsp Whole Wheat Flour ( Aata)
- 2 Tbsp soaked and drained Flatten Rice (Poha)
- 2 Tbsp boiled, mashed potato
- 2–3 Tbsp Yogurt
- 1 Tsp grounded Cumin
- 1/2 Tsp grated Ginger
- 2 Tbsp finely grated
- 1 Tsp finely chopped Green Chillies
- 2 Tbsp roasted Peanuts
- 1 1/2 Tbsp Processed or Parmesan Cheese (Optional)
- 1/2 Tsp Red Chilli Flakes
- Salt to taste
- 1–2 Tbsp oil for brushing the waffle maker
Instructions
- In a blender jar blend the blanched spinach to a puree.
- Transfer the puree to a mixing bowl along with all the other ingredients mentioned other than the oil.
- Mix well together uniformly.
- In the meanwhile, Pre heat the waffle maker.
- Brush lightly with oil. Place the spinach mix using a spoon or ladle.
- Close the waffle maker and cook for 7 -10 minutes or until golden and crisp. Do not open early.
- Once done, serve your savoury Spinach Waffle immediately. You may serve along with your favourite chutney or dips. I love to team it with a lightly spiced salsa or some whipped hung curd along with jalapeño and fried minced garlic.
Notes
Do Not prematurely open the lid of the waffle maker. Wait till the spinach waffle is done and crisp, before opening the waffle maker.
