Cucumber Mint Lemonade

The heat is on and as we wait eagerly for the onset of the monsoons to provide some relief, here is a healthy Summer drink to keep us cool and refreshed throughout the day. This is a simple recipe to execute. Kids in particular would love it. You are better off making it in a large portion and refrigerating. It stays fresh for a couple of days. The drink is quite light and has a healthy dose of cucumber, mint and lemon all blending into a tasty thirst quencher. So this is a no brainer for the summer and quite easily done. Cucumber Mint Lemonade


Stay Cool



  • 1 large English Cucumber
  • ½ cup Lemon Juice
  • ¾ cup sugar or preferred sweetener
  • ½ cup fresh mint leaves (loosely packed)
  • 6 cups cold water
  • 1 large Lemon
  • 8 to 10 fresh or canned Cherries (Optional)


  1. Chop half of the Cucumber and add the chopped cucumber to a large pan.
  2. Add the lemon juice, sugar, 2 cups of water and half of the mint leaves to the pan.
  3. Put the pan over medium heat. Cook, stirring occasionally till the sugar is completely dissolved ( for about 5 mins). Remove pan from the heat.
  4. Pour the liquid through a mesh or a strainer to remove any traces of solid cucumber or mint leaves.
  5. Add the strained liquid to a large serving pitcher. Slice the remaining half a cucumber and one full lemon.
  6. Next add the sliced cucumber and lemon to the serving pitcher along with 4 cups of water and the remaining mint leaves.
  7. Stir well. Serve cold along with some cherries thrown in the bottom of the serving glasses, if desired. You may top it up with some crushed ice for that extra chill.
