Ingredients
- 4 large eggs, separate the yolks and the whites
- 1/3rd cup grated Cheddar Cheese
- ¼ cup Milk
- 2 large Potatoes
- 1 Tbsp Butter
- ½ Tsp Garlic powder
- ½ Tsp Paprika powder
- Salt to taste and season
- Freshly crushed Black Pepper for seasoning
- ¼ cup sliced Chives or Spring Onion Greens (keep some away for the waffle topping)
- 2 – 3 Tbsp Sour Cream ( for the waffle topping – Optional)
- Some shredded fried Bacon (for the waffle topping – Optional)
Instructions
- Pre-heat your waffle maker. It should be quite hot at the time of using. My one has only one setting.
- Peel potatoes and grate them using the fine holes of a hand grater or you may use a food processor too. Put the grated potatoes in a bowl and sprinkle some salt. Mix and toss thoroughly. Let it rest for 5 mins or so. Taking one fistful at a time squeeze out as much as of the water as possible. Transfer to a dry plate or bowl lined with some paper towels so that they can absorb the remaining bit of the water on the grated potatoes, if any. Repeat with the remaining potatoes.
- In a large bowl using a hand mixer beat the egg whites to a soft peak.
- In another separate bowl, whisk together the egg yolks, milk, butter together. Now fold in this mixture along with the beaten egg whites. Add the rest of the ingredients like the grated cheese, potatoes, garlic powder, paprika powder, salt, pepper, chives or spring onion greens. Gently fold them all together until mixed well.
- Scoop and pour the batter into the hot waffle maker. The portion of scoop depends on the size of the waffle iron. I used almost ¾ cup of the batter and cook for 10 – 12 mins or until crispy and golden brown.
- Repeat the above with the remaining batter.
- Serve hot along with waffle toppings of your liking. I have used some bacon, spring onion greens and some peppered sour cream on my ones.
