Ingredients
Ingredients :
- 1 cup thick curd or Greek Yoghurt
- 1 cup Homemade Granola or any other Granola
- 1 cup mixed fresh seasonal fruits, diced
- 2 Tbsp Honey
Ingredients for the Granola :
- 3 cups whole Rolled Oats or regular Oats
- 4 – 5 Tbsp Honey
- 3 – 4 Tbsp Vegetable Oil
- 3/4th Tsp Vanilla Extract
- ½ Tsp Cinnamon powder
- A pinch of Salt
- 1/3rd cup dried fruits, chopped (Dates, Prunes, Apricots, etc) – Optional
- 1/4th cup Seeds ( Sunflower, Pumpkin, Flaxseed, Chia, etc) – Optional
- 1/3rd cup Nuts ( Cashew, Almond, Pistachio, Walnut, etc) – Optional
Instructions
- Pre-heat the oven to 350 °F or 180°C. Mix and blend together the oil, honey, vanilla extract, cinnamon powder and the salt. Transfer the oats to a bowl and add the oil and honey mix to it along with the other optional ingredients if you are using any. Keep the dried fruits to be added later on, post the baking.
- Line the Baking Tray with a Parchment paper (Butter/Wax Paper) and spread the Oats mixture evenly. If the Granola is clumpy, press it against the baking tray with the help of a spatula.
- Bake for 12 – 15 mins stirring half way through. The Granola is ready and done when it is golden – brown and the nuts and seeds are nicely toasted. Take out and place the baking tray to cool. Sprinkle the dried fruits, if you are using any. Transfer the Granola to air tight containers once totally cooled for long time storage.
- To Assemble the Parfait, whisk the yoghurt to a smooth consistency. Scoop 2 Tbsp of the yoghurt into the parfait glass, top it with 2 Tbsp of the Granola and then top it with 2 Tbsp of the fruit mix. Now repeat the process adding a spoonful of honey in between the layers. Served chilled or room temperature.
Notes
Completely cool down the oven- baked Granola before transferring to air tight containers for long time storage.
