Ingredients
Ingredients for the Casing:
- 250 gms refined All purpose Flour (Maida)
- 1 Tsp vegetable Oil
- 125 ml warm water
Ingredients for the Filling:
- 250 gms Chicken mince
- 2 tbsp of Sesame Oil
- 1 big Onion finely chopped
- 1/3 cups finely chopped Spring Onion greens
- 1 Tbsp finely chopped Ginger
- 1 Tbsp finely chopped Garlic
- 2 Tbsp Light Soya Sauce
- ½ Tsp white Pepper powder
- Salt to taste
Ingredients for the Dim Sum Soya Dip :
- 5 Tbsp Light Sauce
- 1/2 Tsp Sesame Oil
- Spring Onion greens, chopped
- 2 – 3 red or green Chillies, finely chopped
Instructions
Instruction :
- To make the dough for the casing, in a medium sized bowl mix together the flour and oil. You may add a pinch of salt to it as well. Pour the warm water in parts. Knead the dough adding water at regular intervals. If it starts getting sticky, dust some dry flour and continue kneading to make a soft dough. Cover with a cling wrap or a cloth. Let the dough rest for 30 – 45 mins.
- After the resting time, take the dough and knead it once again. Now cut them into small round balls with the help of your palms and next using a rolling pin roll them into approximately small 4 inch diameter flat round discs.
- In the meantime, while the dough was resting for 30 mins or so prepare the filling for the dim sums by simply taking all the ingredients for the filling in a bowl and mixing them well together.
- Take 3 of the flat round homemade casing or wrappers at a time. Lay them in a straight line, one after the other, with their edges overlapping like the circles in a Venn diagram. Take small portions of the filling and smear it on the upper half of each of the casing or wrappers. Keep a small bowl of water handy. Dip your finger and moisten the round edges of the casings.
- Next fold over the bottom half of the casing and merge it to the top half, to create a semi – circle. Lightly tap with your fingers to seal the sides of the semi-circular dim sum casing with the filling inside. Holding from one end of the casing or wrapper, start rolling lightly right till the end to create the rose like shape. Now take some water on your finger tips and seal the loose end to the main body of the dim sum. Your rose dim sum is done
- Repeat for the remaining ones.
- In a frying pan over medium flame pour 2/3 cups of water. Transfer all the dim sums to the frying pan. Cover and cook for 10 – 12 mins. Remove and serve hot along with the sauce of your choice, be it soya dip or sweet chilli sauce.
Notes
The entire effort of making the casings or the homemade wrappers can be eliminated and all the effort halved if you can get hold of Gyoza wrappers from the Supermarket. They are available in some of the premium supermarkets. You can then eliminate Instruction 1 and 2 and go straight to 3. Making the rose shaped dim sum with the help of the Gyoza wrappers is fun and enjoyable, as it needs lot less effort and is done in no time!
